Ingredients4 servings

  • 2 cups butternut squash, cubed
  • 8 oz smoked salmon
  • 4 slices sourdough bread, toasted
  • 1/2 cup hummus
  • 1 tbsp olive oil
  • 1 tsp maple syrup
  • ¼ tsp salt
  • ⅛ tsp or pinch of pepper
  • Garnish: fresh herbs (optional)

Directions

Preheat the oven to 400°F. Toss the butternut squash with the olive oil, maple syrup, salt, and pepper. Roast in the oven for 20-25 minutes until golden and tender.

Spread the hummus evenly on each piece of toast, top with smoked salmon and roasted butternut squash. Garnish with fresh herbs and serve with additional hummus if desired.

Notes:

  • Feel free to add 2 eggs your way for more protein. 
  • You can also substitute butternut squash for sweet potatoes or carrots.
  • You can roast the butternut squash the night before to save time. Store in an airtight container in the fridge.

    When I make hummus I sometimes add some roasted sweet potato to the processor . Especially if I have some left over. This saves a step.
